Bok Choy Salad

  • 1 package of baby bok choy, washed , checked and chopped 1 cm wide
  • (You can also use Euro salad mix, shredded red cabbage, or other leafy vegetables).
  • A handful of chow mein noodles
  • Roasted seeds/nuts of your choice: pumpkin, sunflower, walnut…

Peanut Dressing

  • 1 very heaped Tbsp of peanut butter
  • ¼ cup vinegar
  • ¼ cup sugar or maple syrup or honey
  • ½ cup vegetable or extra light olive oil
  • 1 tbsp soy or Tamari sauce
  • 1-2 cloves garlic

Combine all and mix in blender until you can’t recognize the garlic. Pour over salad shortly before serving.
