
Ice Cream Pizza and Sandwiches
CHOCO-MOCHA COOKIE FOR ICE
CREAM PIZZA AND SANDWICHES
- 1 stick butter or margarine
- 13 oz. bittersweet chocolate
- ½ cup flour
- ½ teaspoon baking powder
- ½ teaspoon salt
- 4 eggs
- 1¼ cup sugar
- 4 teaspoons instant coffee powder
- 2 teaspoons vanilla extract
- 1½ cup mini chocolate chips
- 2 cups chopped toasted pecans
Preheat oven to 350°F. Line the cookie pan or jelly roll pan with parchment paper.
Melt the chocolate and butter. Stir until smooth; cool slightly.
In a small bowl, combine the flour, baking powder and salt.
Beat together the eggs, sugar, coffee and vanilla in a large bowl. Beat in the chocolate mixture.
Add the flour mixture. Stir in the mini chocolate chips and the nuts.
Spread the batter in the prepared pans, smoothing the top.
Bake for 15-18 minutes, until cracked and shiny.
Cool in pans.
One recipe makes one round cookie pan, and one jelly roll pan.
ICE CREAM PIZZA
- 1 baked choco-mocha round cookie, left in pan
- 1 litre of vanilla ice cream, softened
- Lyons chocolate dessert sauce
- Lyons white chocolate dessert sauce
- Wilton toffee cupcake crunch
Spread the ice cream on the prepared cookie.
Freeze until firm. Drizzle the chocolate sauce, then the white chocolate sauce, then sprinkle the crunch on top.
To serve, loosen the ice cream from around the pan with the dull edge of a knife. Lift out the pizza, peel off the parchment, and place on a platter.
FOR ICE CREAM SANDWICHES:
After baking your dough, allow it to cool for three to five minutes. Use the Tovolo cookie sleeve to cut desired shapes, cutting two cookies for each sandwich. Allow the cookies to cool completely.
Attach the base to the bottom of the cookie sleeve. Slide one cookie into the base.
Place one scoop of ice cream into the sleeve and on top of the cookie. Place a second cookie of the same shape on top of the ice cream, and press down with the corresponding pusher. For best results, freeze in the sleeve for a couple of minutes.
Remove the base from the mold. Use your thumbs to push the complete ice cream sandwich out.
