Mini Banana Muffins

At a summer program, my friend Sara used to bring banana chocolate chip muffins that we all enjoyed with a cup of coffee. These mini-muffins are a take-off on them.

Preheat the oven to 350˚F. Line the mini cupcake pans with baking papers, or grease well.

  • 6 large bananas, mashed
  • 2 eggs
  • 1 cup sugar
  • ⅓ cup oil
  • ⅓ cup unsweetened applesauce
  • 1 tsp. vanilla extract
  • 2 cups flour
  • 1 cup whole wheat pastry flour
  • 2 tsp. baking powder
  • 2 tsp. baking soda
  • 1 tsp. salt
  • ½ tsp. cinnamon
  • 1 cup mini chocolate chips

Mix the bananas, eggs and sugar well. Add the oil, applesauce and vanilla extract; mix. Add the flours, baking powder, baking soda, salt and cinnamon; stir until all dry ingredients are moistened. Stir in the chocolate chips.

Bake for 20 minutes. Yield: about 60 mini-muffins.
