Mini Banana MuffinsAt a summer program, my friend Sara used to bring banana chocolate chip muffins that we all enjoyed with a cup of coffee. These mini-muffins are a take-off on them. Preheat the oven to 350˚F. Line the mini cupcake pans with baking papers, or grease well.
Mix the bananas, eggs and sugar well. Add the oil, applesauce and vanilla extract; mix. Add the flours, baking powder, baking soda, salt and cinnamon; stir until all dry ingredients are moistened.
