Butter Pecan Ice Cream

This one is a special treat for those of you on an SCD, paleo or lactose free diet.  Of course, anyone can enjoy!

Yield: 4 Servings


  • 4 egg yolks
  • 1 1/4 cup water
  • 2 tbsp almond butter
  • 100 grams ground, toasted pecans
  • 1/3-1/2 cup honey
  • 1 tsp. vanilla extract
  • Pinch of.salt
  • 50 grams chopped, toasted pecans


  1. In a food processor, process all ingredients except chopped pecans until very smooth.
  2. Pour mixture into a pan and freeze in a flat layer until completely frozen.
  3. When frozen, reprocess until smooth and mix in the chopped pecans.
  4. Freeze until serving.

These nifty little bowls are perfect for a serving of ice cream. Mix up the
colours for more fun!
