This easy, refreshing salad is great on it's own, or alongside meats and fish. A really satisfying healthy snack, when you need a nibble!
- 10-12 Carrots, shredded
- 28 oz. can of crushed pineapple in natural juices
- Juice of half a lemon
- Combine all ingredients (including juice from pineapple), and refrigerate.
