Sweet Carrot Salad

This easy, refreshing salad is great on it's own, or alongside meats and fish. A really satisfying healthy snack, when you need a nibble!

Ingredients

  • 10-12 Carrots, shredded
  • 28 oz. can of crushed pineapple in natural juices
  • Juice of half a lemon

Directions

  • Combine all ingredients (including juice from pineapple), and refrigerate.
